Working with agricultural products means accepting that not everything can be planned in advance. Seasons bring variation, uncertainty, and sometimes limitation — but they also bring balance and meaning to the work.
Each period of the year influences decisions, from production to availability. Some creations only exist for a short time, shaped by climate, growth, and natural cycles. Others evolve slowly, requiring patience rather than speed.
Rather than resisting these changes, we choose to follow them. Seasonality becomes a guide, not a constraint. It reminds us that quality comes from attention, timing, and respect for what the land allows.
